  Nobody really knows the secret of old vines, but the legends (sometimes urban) are many. It appears for example, they make better wines than the young ones, nevertheles, no one can really prove it. Whatsoever, winemaking is a complex process, just the age of the vines is not sufficient to “do good.”
  Fortunately Bacchus happened to meet several key factors: very old vines (CENTENARIANS), a great variety (CARIGNAN), a Mediterranean vintage (2009), a passionate and experienced winemaker (...) — Lire la suite.

  Looking closely at grape varieties you may learn a lot. That’ s what we did with VIOGNIER at the beginning of 2015. The variety almost had disappeared in the sixties (there were barely 8 hectares left in 1965), but nowadays it guarantees for international reputation of the wines of CONDRIEU, with more than 100 hectares of vines planted on steep terraces and slopes of this AOC in the northern Rhone Valley.   Sauvignon, Viognier, Muscat... a proud blend! Grape varieties, skin maceration and barrel fermentation (for 70% of the cuvée) are equally responsible for the deep golden colour and intense bouquet of this wine: peach, pear, apricot, butter and a little vanilla, white flowers ...

  “A Cru of generous spirit” that is what RASTEAU says of RASTEAU. At least since 2010, the year of birth of this 8^th Cru of the southern Rhone Valley (“Cru” being the highest classification of an AOC in the Rhône), previously classified as Côtes du Rhône Villages.   I like the end of the year. And Christmas and New Year’s Eve oo. Now you know. No, this has nothing to do with consumerism, because I do not like “going shopping”, even more at this time of the year: too many people, too many lights, too much noise, too much plastic ...

• A good glass of - #Champagne Paul Lebrun Vintage 2008

  Here’s a vintage like one we don’t find often in Champagne. Characterized by cool weather conditions and slow bottle maturation, it took no less than five winters in the tranquility of our cellars, to fully develop its bouquet and balance. A light gold color, fast and regular bubbles that burst like sparks at the surface of the wine.   The first idea that comes to my head, is to confirm this statement after a slight nuance: fat is taste! It’s true for ham, it’s true for meat and everybody knows that a good ladle of cream or butter seriously enhances the flavours of any sauce worthy of its name. To reassure those who want to keep their line, I agree that food and flavours that without fat exist indeed: fruits and vegetables, honey, tofu, tea ...
