Ingredients for 4 people
2 pink grapefruits 2 ripe avocados Twenty raw king prawns 1 half bunch of fresh coriander or parsley 1 lemon A piece of fresh ginger 1 clove of garlic A pinch of Espelette pepper Olive oil Salt

I became aware of the great potential of Malbec for the first time in a series of tastings at the German Pro Wine Fair in 2004. Better late than never ... Before that, I mainly knew the variety from some cheap bottles of soulless Negociants, which operated on a large scale to sell the prestigious AOC Cahors for cheap money. Shame on them!

WHAT AND HOW ?
Visual aspect : golden yellow colour, beautiful brilliance. Fine bubbles. Nose : fresh, pleasant. Notes of pears and greengage. Palate : pure, very different from the nose, peaches and a hint of lemon. Beautiful finish. Match with food : aperitif, tartar of monk fish and marinated salmon. This is as close as Malbec gets to a Port-style wine. It is rich,
lightly nutty and well balanced between sweet black fruits and
