  Approximately 50 km south of Epernay and the famous Côte des Blancs, there is a further, historic part of Champagne, the Sézannais. Its continental climate produces rich and full-bodied Chardonnay.
  This is also where Champagne J.Vignier produces its Silexus Sézannensis, named after the fossilized remains of prehistoric vines, roots in the soils of a location called CHATET near Saudoy. It takes good grapes to make good wine. But protecting a vineyard against the invasion of fungi and insects is not always an easy affair. So, close to harvest, you will always find a few rotten berries in a vineyard. Knowing that grapes in bad shape can innoculate harmfull microorganisms and provoke dubious flavors in a wine, you should better remove them before starting. Therefore, sorting out bad grapes is an excellent way to achieve proper crop quality in the cellar.

  The grapes for this wines, produced only in small quantities, come from vineyards next to the winery. The Cèdre Héritage, a blend of Sauvignon Blanc, Semillon and Muscadelle, surprises by its lightness and its crispy acidity, proposing a wide range of fruit flavours. A wine full of fun, but not without depth, that you may enjoy with raw or grilled fish, a fresh summer salad or goat cheese.

• Marinated Munster - A real challenge for cheese lovers! #Recipe

  A very tasty dish, though not very low in calories. But nevertheless fits very well for summer! Very easy to prepare (the day before) and definitely loved by all cheese fans. 100% success guaranteed!
  Ingredients for 4 persons 1 not too ripe Munster cheese 250 ml crème fraîche 1 glass Mirabelle brandy or schnapps 1 bunch of chives Salt pepper 1 kg waxy potato (Amandine, Roseval, rat ...) 300 g raw ham

  No wine is closer to the sun, the sea and the lightness of being than Rosé. But far from being limited to a certain frivolity, we present here a rosé with character, nevertheless marked by elegance and finesse.
  Made from Grenache and Cinsault with a touch of Syrah, its light, transparent color reminds of rose petals, which one also finds in the taste, together with raspberries and lychees.
