We have been talking about it already last year in spring: The Rhone 2011 vintage requires patience. We started on a sunny Wednesday 14th of September, harvest was hand picked and sorted, natural yeasts carried out fermentations, late-harvested grapes were put in the vats without destemming and tannin extractions were long and slow.

This almost dark wine is made of both Cabernets grown at the Domaine de l’Arjolle, C. franc and C. sauvignon. The aromas of the wine emphasizes why I love those grape varieties: leather, cassis and elder berries, together with something slightly herbaceous. You could call it green pepper, but to me the odor is somehow more ladylike, reminding more of slightly sweet and spicy chilies.

To improve soil structure and vitality we regularly spread compost in our vineyards during winter. Compost contains organic materials and important minerals for plant growth, but also shows high water storage capacity. The latter improves water supply, especially beneficial to plants during summer. A Pinot noir from the South, growing in a rocky place called “Les Aspres”, which means “arid” in Catalan. I promise that he doesn’t smell like a Pinot from the north. It’s not an substitute for Burgundy wines and you still will find many reasons to purchase wine from the vineyards around Beaune…
