After 14 months of ripening in tanks and barrels, all the wines from Domaine Santa Duc have been bottled between the 16th and 20th of April (with a lunar position favourable to fruit) and are now available in France and abroad: Our prestige wines Hautes Garrigues, Tradition and Grand Grenache from Gigondas, but also our dinner and pleasure wines, that take care of your daily well-being – Les Quatre Terres, Les Vieilles Vignes, Les Plans, as well as the white Les Fournas from Sablet, vintage 2011.
If you happen to be at the Plaza Hollywood, Kowloon, Hong Kong these days to do some shopping, you might drop into the lingerie department to purchase... some Santa Duc Vin de Pays from the Rhône Valley. I must say that I am quite familiar now with all sorts of wine & something combinations like chocolate & wine, cheese & wine, music & wine, art & wine. But French lingerie & wine…? That’s new to me, but I guess I appreciate the alliance.
In any way, I will have a drink on all those, who especially dress up to have a glass of Santa Duc wine!

Since a couple of years, climate seems to change. What about the climate in Cahors?
Pascal Verhaeghe: Actually, we have noticed some change during the last 10 years. There is more wind and periods of heat and drought are more frequent.
Mid-August, we normally start harvesting by picking some 70% of the grapes from a Chardonnay plot planted in 1985. After a whole bunch pressing, the juice of these early picked, particularly fresh and fruity grapes is fermented for three quarters in steel tanks ...

Harvest started on august 31st with our Viognier. The grapes were perfectly healthy and very tasty. The yield amounted to about 30 hl/ha, with a total alcohol of 13%vol and a fresh, crispy acidity...

For the beginning of the new year, we would like to share a recipe of Clément Bonano, chef of the Auberge des Combes with you. The chef himself loves to have a bottle of Synthèse Merlot with this dish, but the spicy aromas of our Zinfandel and the smooth tannins of our Paradoxe (a cuvee of Syrah, Cabernet franc, Grenache and Merlot) are also very suitable to accompany this meal.
